Tea Biscuits:

  • 3 cups (spooned and leveled) all-purpose flour
  • 1 cup confectioners’ sugar
  • 1 cup (2 sticks) cold unsalted butter, cut in pieces
  • 1/2 teaspoon salt
  • 1 whole egg, plus 3 large egg yolks
  • 1 teaspoon vanilla extract

Oven @ 350º

  1. Place flour, sugar, butter, and salt in the bowl of a food processor; process until mixture is the texture of coarse meal.
  2. In a small bowl, lightly beat egg  and yolks with vanilla; with motor running, add to food processor. Process just until a dough forms.
  3. Place dough into cookie press fitted with the zigzag plate, or a pastry bag fitted with tip 789
  4. Pipe dough to desired length, and place cookies on sheet pan lined with parchment.
  5. Bake for 10-15 minutes (mine took 12 minutes, but may vary depending on your oven temperature).
  6. Let set for 5 minutes, then transfer to a cooling rack.
