and so it begins…

this recession is really pushing me to use my imagination when it comes to putting food on the table. i love making even the simplest of meals into something visually spectacular, but there’s only so much you can do with a few pantry ingredients – or so i thought. behold: polenta griddle cakes with shirred eggs and caramelized red onion.

i had a little bit of polenta that i cooked up, that i pressed into some small tart tins. I chilled them for about an hour or so, and sheared two eggs (egg + cast iron skillet  +broiler = shirred eggs). caramelized the rest of a sad red onion i had in my fridge, and well… that was the result. i will never say that “i have nothing to make for dinner” again.
