Chocolate Pots de Cremes:
2 lg. eggs
6oz. dark chocolate
1/2 vanilla bean, scraped
1 c. heavy cream, scalded
In a blender, add: eggs, chocolate and vanilla bean seeds. Blend until smooth (about 30 seconds) Slowly add the scalded cream and continue blending until well incorporated.
Pour the custard into pots de creme cups, or small ramekins and cover with plastic wrap. Place on a sheet pan and chill in the refrigerator 2 hours, or overnight.
Before serving, top with cacao nibs and serve with tea or coffee.

i feel so sad . you have beautiful photograpic skills, a good camera, a nice selection of recipes, good dialog and no commentors to speak of. maybe someone should direct some traffic to your site…maybe a comment in The Kitchen. i’ve added you to my short list of favorites (i’m finicky about picking favorites)

Comment by andrea May 12, 2009 @ 5:33 amI purchased these ceramic cups at crate & barrel about a year ago… Think they still carry them though. They also come in a larger size, perfect for hot chocolate, or other desserts! Hope that helps
